Jordan Spesak

Jordan Spesak is a hospitality executive who combines Michelin-caliber training, international exposure, and hands-on expertise to create deeply memorable dining experiences. As General Manager of Amaya in Austin, Texas, Jordan leads operations, guest experience, and team development for the new and influential venue within Paseo, part of the LV Collective.

His career began across New York City’s Michelin-starred restaurant scene. He has held many roles at Michelin properties across the front and back of house from: cook, service and sommelier at Atera; service manager at Atera’s sister restaurant, Farra; sommelier at Atomix; opening team at One White Street; and, assistant general manager of Sushi Nakazawa, all of which demonstrate his scale, demand for excellence and an intuitive sense for service, beverage, and guest experience. Jordan has also led restaurant openings and major reinventions, including Farra, One White Street, and now overseeing Amaya’s opening in Austin. To add to Jordan’s versatility, he brought the Atera fine-dining experience across the world to South Korea, and studied hospitality, culture and Nordic techniques at Kong Hans in Denmark.

At the heart of Jordan’s leadership is a belief that hospitality is about more than food and service, it’s about creating connection and lasting memory. His ability to weave together cuisine, beverage and atmosphere demonstrates an understanding of what makes experiences not only exceptional, but unforgettable.

Originally from Southern California, Jordan is a lifelong Dodgers fan and former minor league hockey player, drafted as a teenager into North Carolina. He is a graduate of the Institute of Culinary Education in New York, where he studied Culinary Arts, Business Management, and intensive Sommelier training. Now based in Austin, he embraces burnt orange culture, explores Hill Country and Lake Austin, immerses himself in the local music scene, and pursues his quest for the best barbecue in North America.
